Managing sugar in a hot oven

Balsamic glaze is reduced grape must with a significant sugar content, and sugar in a 425°F oven darkens fast. That heat is exactly what you need to crisp chicken skin, so the recipe sets up a conflict on purpose and then manages it.

The marinade is built to survive it. Olive oil carries the flavor and slows scorching, tomato paste thickens the coating so it clings instead of pooling and burning on the pan, and only a teaspoon of honey goes in — more would tip the balance.

Before you start

  • Marinate at least 30 minutes; overnight is better but not required.
  • Bring the chicken towards room temperature while the oven heats.
  • Use a pan large enough that the thighs are not touching.
  • Have a thermometer to hand — skin color is a poor guide when the glaze is this dark.

Storage and reheating

Refrigerate up to 3 days. Reheat to 165°F (74°C), the USDA safe temperature for leftovers.

Questions

Can I use balsamic vinegar instead of glaze?
You can, but reduce it first — about 1/2 cup of vinegar simmered down to 3 tablespoons. Used unreduced it is thin and sharp and will not coat the chicken.
Boneless thighs or breasts?
Boneless thighs work; reduce the roast to about 22 minutes. Breasts dry out at 425°F, so if you use them, check early and expect a less forgiving result.
Can I marinate it too long?
Overnight is fine. Beyond about 24 hours the acid begins to affect the texture of the surface meat, making it slightly mealy.
