Why three dairy ingredients
The filling looks over-complicated until you consider what each part contributes. Dropping one of them is the usual reason a version of this comes out either greasy or watery.
- 01Cream cheese for structureIt sets as it bakes and holds the casserole together, which is why a spoonful keeps its shape on the plate.
- 02Sour cream for tangWithout an acidic component the dish is very rich and reads flat. Sour cream cuts through the cream cheese and cheddar.
- 03Cottage cheese for bodyIt adds bulk and moisture without more fat, and it melts away entirely — there is no curd texture in the finished dish.
Before you start
This is an assembly job, so everything should be ready before the bowl comes out.
- Have the chicken already cooked and shredded — rotisserie is fine.
- Take the cream cheese out early; softened means room temperature, not microwaved.
- Crush the crackers coarsely, not to dust, or the topping turns to paste.
- Grease the dish properly; the cheese catches at the corners.
Troubleshooting
| Problem | Cause | Fix |
|---|---|---|
| The filling is lumpy | The cream cheese went in with the other liquids. | Beat it smooth on its own first, then add everything else. |
| The topping is pale and dry | The crackers went on unbuttered. | Toss them in melted butter before they go on. |
| It runs on the plate | It was served straight from the oven. | Rest it 10 minutes. It firms up noticeably as it cools. |
| It tastes heavy | The sour cream was reduced or replaced with more cream cheese. | Keep the sour cream — the tang is doing real work against the fat. |
Storage and reheating
Refrigerate up to 3 days, covered. Reheat to 165°F (74°C), the USDA safe temperature for leftovers.
Reheat covered at 325°F so the cracker topping does not burn before the middle warms through. Uncover for the last 5 minutes if you want the top crisp again.
It can be assembled a day ahead and baked from cold; add roughly 10 minutes. Freeze before baking rather than after — the dairy separates less that way.
Million Dollar Chicken Casserole
Shredded cooked chicken folded through a cream cheese, sour cream and cottage cheese base, baked under cheddar and a buttered cracker top. Built around already-cooked chicken, so it comes together in one bowl.

Cook’s checkpoint

Use a food thermometer. Color and time alone don’t confirm poultry is done.

Notes
- Rotisserie chicken is the practical shortcut here and needs no adjustment.
- Cottage cheese adds body without the extra fat of more sour cream; it disappears completely once baked.

Questions
- Can I use raw chicken?
- Not directly. The bake time is set for a dish that is already cooked through, and raw chicken would not reach a safe temperature reliably in that window. Poach or roast it first, then shred.
- What can replace cream of chicken soup?
- A simple white sauce works: 2 tbsp butter, 2 tbsp flour, and 1 cup chicken broth cooked until thickened. It is less salty, so taste before seasoning.
- Can I add vegetables?
- Steamed broccoli or spinach folds in well. Drain them thoroughly first — wet vegetables are the most common cause of a watery casserole.
