The baked meatballs freeze well on their own for up to 3 months. The assembled casserole does not — the rice goes mealy.

- Assemble it through step 6, refrigerate covered, and add the cheese and bake when you want it. Add about 10 minutes to the final bake if it goes in cold.
- What rice works best?
- Long-grain white holds its shape well under sauce. Brown rice works and adds chew, but cook it fully first — it will not soften further in the casserole.
