What goes where
Two vegetable layers, one meat layer, and sauce three times rather than once.
- Potato and carrotOverlapped like tiles. Both are raw and both need the same thin cut, or one finishes long before the other.
- Beef, already cookedThe only fully cooked component. It goes in the middle where it seasons both vegetable layers as the dish bakes.
- Sauce, in thirdsA third under the beef, a third above the second vegetable layer, a third across the top. Poured all at once it never reaches the bottom.
- Cheese, held backHalf a cup buried in the middle, the rest only after the foil comes off. Cheddar under foil for fifty minutes renders into grease.
Foil packets or a baking dish
This started as a campfire dish — everything wrapped in a foil packet and buried in coals, which is where the name comes from. The packet version still works and the ingredients do not change.
A baking dish gives more even heat and lets you brown the top, which foil cannot do. It also holds the sauce, where individual packets tend to concentrate it unevenly. The trade is that packets portion themselves and travel.
If you want the original, divide everything across four large foil sheets, seal them into loose parcels with room for steam, and bake at the same 375°F for about an hour. Skip the final uncovered stage; there is no way to brown cheese inside a sealed packet.
Troubleshooting

Storage and reheating
Refrigerate covered up to 4 days. It portions far more cleanly cold than warm, so cutting it the next day is easier than cutting it on the night.
Reheat to 165°F (74°C), the USDA safe temperature for leftovers, covered at 325°F for about 20 minutes. Uncovered the top layer of potato dries before the center is warm.
It does not freeze. Cooked potato slices turn grainy and the condensed-soup sauce separates on thawing.
Hobo Casserole
Sliced potato, seasoned ground beef and carrot layered in a single dish under cheddar and a light cream sauce. Everything cooks together, so the potato has to be sliced thin enough to keep up with the meat.

- The name comes from the foil-packet campfire version. Baked in a dish it is the same idea with more even heat, and a disposable foil pan works identically if you want the original presentation.
- Carrot coins want to be thin — around 1/8-inch, the same as the potato. Cut into chunks they stay hard while everything else is done.

- Can it be assembled ahead?
- Yes, up to a day, provided every potato slice stays covered by sauce — exposed raw potato grays. Add about 15 minutes to the covered bake if it goes in cold.
- Is the condensed soup necessary?
- No. A roux of 3 tbsp butter, 3 tbsp flour and 2 cups milk, seasoned, does the same job with more control over the salt.
- What other vegetables work?
- Green beans and corn both suit it, added with the second vegetable layer. Keep total volume similar, or the sauce will not stretch.
- Can ground turkey be used?
- Yes, cooked to 165°F (74°C) rather than 160°F — ground poultry carries a higher safe minimum. Add a tablespoon of oil when browning, since turkey renders very little fat.
